Trained in Gastronomy in Paris and Wine Tourism in Bordeaux, Julieta Aguilar approaches Mexico’s culinary culture through the lens of territory, heritage, and the stories embedded in the land. Her formation in France shaped a way of understanding food and wine not merely as products, but as cultural expressions shaped by geography, memory, and human intention.
Over the past decade, she has developed wine tourism and gastronomic initiatives throughout Guanajuato, working at the intersection of landscape, hospitality, and cultural interpretation. Through this experience, she observed how Mexico’s culinary identity extends far beyond flavor — rooted instead in soil, climate, craft, and generational knowledge.
She founded Mexican Terroir as a luxury experiential agency dedicated to translating that complexity into intimate, privately guided encounters. Each experience is designed as a structured yet sensorial reading of place — where territory becomes legible through taste.
Her approach balances scholarship with sensitivity, depth with accessibility — inviting guests not only to taste, but to understand, contextualize, and connect. Through land, memory, and meaning, she reveals Mexico as a living cultural landscape.
